Beginning this month, afternoon tea guests at the downtown luxury hotel will have their choice of a Traditional Tea, the formal English version that’s been served at the Hotel since 2002, or a new Texas Tea that incorporates Lone Star-inspired flavors into a menu filled with local ingredients.
In crafting the new themed menu, Chef de Cuisine Grant Macdonald turned to the tastes and textures he first encountered when he moved to the Texas capital in 2011.
“As a chef, for inspiration I always look to my local environment – the farms, ranches and orchards,” says Grant. “I like to see what’s coming out of the earth and to think about how I can put it on a plate.”
So, for example, while regular tea guests nibble on items like Smoked Salmon with Dill and Cucumber and Brie mini-sandwiches, those who choose the Texas Tea enjoy heartier flavors such as Gulf Shrimp Chipotle Apple Salad with Avocado on Wheat, Texas Peach Serrano Jam with Pure Luck Blue Cheese on Cornbread Toast, Smoked Farm-to-Table Vegetable Ratatouille with Hoja Santa Goat Cheese on Crostini and Dewberry Chicken Salad with Roasted Poblano Mayo.
In addition to the food selections, afternoon tea guests enjoy their choice of premium loose-leaf green and black teas, along with picturesque views of Lady Bird Lake. Special menus are available for children, and gluten-free menus are available for those with a gluten intolerance.
Afternoon tea is served daily from 1:30 to 3:30pm, and is $30 per adult and $17 per child. For reservations, please call (512) 685-8300.
